I figure I would start with the first recipe I learned, and there are many joke about
2c Applesauce
1t soda
Mix and set aside
1c Sugar
1c Shortening
1c Brown Sugar
Cream then add
2 Eggs
Cream then add applesauce mix and mix until well blended
2c Flour
2t Cinnamon
2t Nutmeg
1 1/2t Cloves
Sift than add to wet mix
Put in a greased and flours pan
Bake at 350 for an hour to an hour and fifteen
Now for the jokes and thoughts
This was my dads favourite growing up. My mom thought to make it for him. She tried many different recipes, his response was always a version of 'it is good, but it is not applesauce cake'. She finally asked his mom for her recipe. Now you need to know my dads mother was a great baker, and she had recipes, but her version of recipes are written in what I call a dialect for old school cooks. My mom had to translate "ripe good hand full" into cups. It is a family favourite, and any time it is made we joke about whose hand should be used to measure the raisins.
The recipe calls for shortening, but my mom uses unsalted butter, as do I
My mom usually uses less cloves, and nutmeg, the cloves because she does not like their overpowering nature, and the nutmeg because we use fresh, and a little fresh goes along way; on the other hand I cut nothing, and even up the cloves, but that is because cloves are proven to help with pain, and as long as it does not ruin the flavour of the cake I do not see why I cannot get an extra boost from a splurge of cake
